Nicaragua Hacienda Sajonia
Nicaraguan Hacienda Sajonia is grown in the Jinotega region at 1245-1580 masl and has a sweet honeydew melon acidity with honeysuckle aroma and orange blossom notes, a brown sugar sweetness and a full bodied mouthfeel. It is Rainforest Alliance certified and is fully washed and sun dried.
Hacienda Sajonia was bought in 2010 by two English brothers, Tom & Matt Hills. Although it was a beautiful place, the farm was in a sorry state but the brothers were inspired not only by the farm's beauty but also its potential to produce speciality coffee. The brothers set about upgrading the farm, planting more coffee wherever possible and introducing modern agronomic practices to bring it up to the standard required for speciality coffee. They also improved the social and economic conditions on the farm.
